Instructions
Gather your ingredients.
Mix together your Funfetti cake batter. (Mine called for 4 egg whites, 1 1/4 cups water, and 1/2 cup vegetable oil.
Pour batter into a sprayed muffin pan or cupcake holders.
Bake cupcakes at 350 degrees Fahrenheit for 18-20 minutes. You can check if it is done by poking a toothpick into the center and watching for it to come out clean.
After the cupcakes have baked, let them cool down for 10 minutes.
Once your cupcakes have cooled, mix 2 drops of green food coloring into your frosting. Mix until fully combined.
Add a dollop of frosting to the top of each cupcake and smooth it evenly across the surface of the cupcake.
Using the tip of your butter knife, create little grass blades by lightly touching the frosting and quickly lifting up. Do this until your cupcakes look like little patches of grass.
Sprinkle the top with sprinkles from the frosting container and top with 2 mini Cadbury eggs. Enjoy!
