Instructions
First, preheat your oven to 225 degrees Fahrenheit and lightly spray a baking sheet.
Then, add your egg whites and vanilla to your stand mixer or mixing bowl and beat them until you have stiff peaks.
Next, add your nuts to the mixer. Fold them into the stiff peaks until the nuts are fully coated.
In a separate bowl, mix together the brown sugar, white sugar, cinnamon, and salt.
Dump sugar mixture onto almonds to coat. Mix until the almonds are evenly coated.
Once the almonds are coated, spread them onto the baking sheet in a single layer.
Bake the almonds at 225 degrees Fahrenheit for one hour, stirring every 15 minutes.
Finally, take the almonds out of the oven and allow them to cool.
