Chex Mix Easter Nests

Since Easter is just around the corner, I decided to combine two of my favorite things: gooey Chex mix and Cadbury mini eggs. Typically you see cute little “nests” made out of chow mein noodles, but I think they taste like cardboard. So I set out to find something that still looked like a nest, but that I could actually swallow voluntarily. I LOVE this delicious Chex mix recipe and it made the perfect little nest for my chocolate. Try these simple Chex mix Easter nests for yourself!

Chex Mix Easter Nests

Chex Mix:

Combine in a large bowl:

  • 1/2 box of Chex cereal (any variety)
  • 1/2 cup Shredded sweetened coconut
  • 1/2 cup slivered almonds

In a saucepan melt:

  • 1/2 c. Karo Syrup
  • 5 TBSP. of butter
  • 1/2 c. Sugar
  • 1/2 tsp. vanilla

Bring sauce to a boil and allow to boil for 1 minute while you stir it. Remove from the heat and pour over the cereal mixture and toss to coat.

Then I pressed them into muffin tins lined with cupcake wrappers and topped them with Cadbury mini eggs. Luckily, making the 24 we needed for our friends and neighbors still left about 1/2 the mixture for me and Lucy to eat! 🙂IMG_8974
