I made this pink marshmallow popcorn treat for an amazing unicorn party. It was huge hit! You’re going to love how easy it is and how much everyone enjoys it.

The one twist here is a packet of strawberry jello powder, which turns the whole batch a gorgeous pink and adds a fruity flavor on top of all that melted marshmallow.   • 6 oz (3/4 cup) salted butter
  • 16 oz bag mini white marshmallows, divided (save some for the garnish)
  • 1 cup pastel-colored marshmallows
  • 3.5 oz packet strawberry jello powder (gelatin)
  • 12 cups popped popcorn (plain, air-popped with no butter or salt, or a bag of plain microwave popcorn)
  • Sprinkles, for garnish

How to Make Unicorn Marshmallow Popcorn

1. Melt the butter. In a large stockpot, melt the butter over low-medium heat. Use a big pot, you’ll be glad you did once the popcorn goes in.

2. Melt the marshmallows. Add most of the bag of mini marshmallows (save a handful for garnish) and stir frequently until melted, about 3-4 minutes. A few small lumps are totally fine.

3. Add the jello powder. Remove the pot from the heat. Stir in the strawberry jello powder until fully combined and the mixture turns a solid pink.

4. Fold in the popcorn. Pour in the popped popcorn and gently fold it into the marshmallow mixture until every piece is coated. Working in a stockpot instead of a smaller pot keeps everything contained.

5. Garnish and set. Spread the popcorn onto parchment or wax paper. While it’s still warm and sticky, scatter the pastel mini marshmallows and sprinkles on top so they stick.

6. Cool and serve. Let cool for about 10 minutes, then separate into pieces and serve.

Instructions

  • In a large stockpot melt the butter of low heat
  • Once the butter is melted add in the bag of white marshmallows and let them melt. Stir constantly until melted.
  • Remove the pot from heat and add the strawberry Jello. Stir until fully mixed and the color is pink throughout.
  • Gently fold in the popcorn, mix gently until well coated.
  • Spread the mixture out on parchment paper and sprinkle with pastel marshmallow and sprinkles.
  • Let cool for 10-15 minutes and serve.
