1). Refried Beans
You can use homemade or canned refried beans for this! Simply remove the beans from the can and warm them up in the microwave or stove. This will help to loosen them up a little and make them easier to spread. For those who want extra flavorful beans, try adding a bit of salsa or cumin to the beans. This will do wonders to elevate the refried beans and make them that much more scoop-able!
2). Guacamole
If you have the time and ingredients, I definitely suggest making the guacamole yourself. Doing so just allows you to control the flavor and texture a little more (I make mine extra creamy by adding a dollop of cottage cheese!). However, either homemade or store bought will work great! For those who do make it from home, here’s a simple recipe.
- 4 large avocados, halved, pitted
- ½ cilantro finely chopped
- Zest 1 lime, plus the juice of 2 limes
- ½ tsp of garlic salt to 1 tsp or plus to your taste
- 1/2 Roma tomato, chopped
- 1 large dollop cottage cheese
In a large bowl, add the ingredients except tomato. Smash until smooth and then sprinkle in tomatoes.
3). Sour Cream
Sour cream is nice and cool, which really helps to freshen up the dip. On its own, the sour cream is great. However, you can take it to the next level by mixing in coriander, paprika, and salt. These will draw out the natural creaminess of the sour cream, while also adding an additional depth of flavor.
4). Grilled Corn Salsa
Because of the added flavors, you really can use fresh, frozen, or even canned corn to make this layer! The corn is naturally sweet, and grilling it adds a smokey flavor that is tantalizing! That along with a mix of cilantro, jalapeno, lime, and red onion makes this corn salsa a flavor bomb that is perfect for crafting the ultimate 7 layer dip!
5). Cotija Cheese
Cotija cheese is a crumbly cheese that is creamy and salty. This makes is a great compliment to the flavors that are already in the dip. If you can’t find cotija at your local store, you could always try replacing it with feta or queso fresco. These have similar textures and flavors!
6). Shredded Lettuce
The bottom layers of this dish tend to be very smooth, so lettuce adds a nice variety of texture to this dish. You could use any type of lettuce you prefer, although I’d probably recommend either butter lettuce or iceberg. I know that radishes aren’t the most common dip ingredient. If you don’t like them, you can totally skip them. However, I think they add a freshness and crunch that just breathes life into this 7 layer dip! This Ultimate 7 layer dip recipe can last 3-4 days in the fridge. However, just know that the longer it is stored, the more the layers bleed together. This can result in it getting a bit watery (but you can easily drain it off). After the first 24 hours, it may not look pretty, but I can assure you it will still taste uh-maz-ing!
Ultimate 7 Layer Dip Recipe
Ingredients
- 1 Tbsp olive oil
- 3 cups of grilled corn kernels cut from the cobs about 3 ears of corn
- salt and pepper
- ¼ cup fresh chopped cilantro
- 1 jalapeno seeded and finely diced
- 1 lime juiced
- ½ red onion finely chopped
- 1 can refried beans
- 2 cups guacamole recipe follow store bought is fine too
- 2 cups sour cream
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 5 ounces cotija cheese crumbled
- 4 red radishes sliced julienne
- 2 to 3 cups shredded lettuce
- 1 bottle hot sauce optional
- 1 bag tortilla chips
Instructions
- Grilled the corn on a cob. Once it has cooled down a little, take the kernel off and put it in a bowl. Add the cilantro, jalapeno, lime juiced, and red onion.
- Warm your can of beans. Mix and let it cool down a little. While waiting grab your 19-by-13 inch pan ( clear glass would be ideal so it will show your layering) I forgot to do this when i was making this recipe till the end i noticed i used my non clear white pan.
- Spread the refried bean to the bottom of the pan evenly. This is your first layer.
- Carefully spread your guacamole over the beans, evenly.
- Mix together the sour cream, coriander, paprika and 1 tsp of salt thoroughly. Carefully spread it over the guacamole.
- Sprinkle the grilled seasoned corn salsa. Then the crumbled cotija cheese.
- Top it with the shredded lettuce and the radishes. If desired, drizzle with hot sauce.
