What is Fruit Pizza?
Fruit pizza is a satisfying dessert that starts with a slightly underbaked sugar cookie base. To this base you add a healthy layer of cream cheese frosting. On top of that, there’s a layer of whatever fruit you want!
It is sweet, creamy, and refreshing. A perfect dessert for a summer pool party, backyard barbecue, or holiday party.
Ingredients for this American Flag Fruit Pizza
There are 3 main components to this recipe: sugar cookie dough, frosting, and fruit. Each of these components has its own set of needed ingredients.
- Basic baking ingredients – (like flour, sugar, butter, eggs, and a few other things) to make the sugar cookie dough crust.
- Cream cheese, butter, vanilla, and powdered sugar for the frosting
- Fruit! To make a patriotic fruit pizza, I would recommend using fruits such as blueberries, strawberries, raspberries, blackberries, cherries, coconut, or even pomegranate seeds!
Frequently Asked Questions
Can I make fruit pizza ahead of time? – You could make the crust and frosting for fruit pizza 2-3 days in advance. However, if you wanted to make the fully decorated fruit pizza, I would recommend only doing it a day in advance. Due to the cut up fruit, this recipe is best served fresh.
How can I make gluten-free fruit pizza? – To make a gluten-free sugar cookie crust, simply use gluten-free flour in a 1:1 substitute ratio. I know people who have used Trader Joe’s Gluten Free Flour and had success.
How can I keep the fruit fresh? – Berries tend to hold up pretty well, however sliced fruit can brown pretty quickly. To keep your fruit from browning, lightly brush it with lemon juice. Additionally, keep the fruit pizza in the fridge when not being eaten.
Tips for Storing Leftovers
While I find it highly unlikely that you will have ANY leftovers, here are some tips for storage (just in case!)
Because of the fresh fruit and cream cheese frosting in this recipe, it needs to be stored in the fridge. This will help preserve the fruit for as long as possible.
If stored correctly, an American Flag fruit pizza can keep in the fridge for up to 3-4 days. Generally after 4 days the fruit turns slimy and gross, so enjoy it quickly!!

American Flag Fruit Pizza
Equipment
- 1 Mixer
- 1 set of measuring cups
- 2 large bowls
- 1 Small Bowls
- 1 Knife
- 1 Cutting Board
- 1 Spatula
- 1 Jelly Roll Pan
- Parchment paper
Ingredients
Sugar Cookie Dough
- 3/4 cup sugar
- 1 1/4 cup flour
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1/2 cup butter softened
- 1 tsp vanilla extract
- 1 large egg
Cream Cheese Frosting
- 12 ounces cream cheese softened
- 1/4 cup butter softened
- 1 tsp vanilla
- 1 1/4 cup powdered sugar
Fresh Fruit
- blueberries
- strawberries sliced
Instructions
- Make the Sugar Cookie Crust: To make the sugar cookie dough, mix together your butter, sugar, egg, and vanilla until well combined. Both an electric mixer or a wooden spoon will work to mix it all together. Once your wet ingredients are well combined, add in the flour, baking powder, and salt. Mix until all the ingredients have formed a consistent dough texture and color.
- Chill Cookie Dough: Take your bowl of cookie dough and chill it in the fridge for 30 minutes.
- Bake the Crust: Preheat your oven to 350 degrees. then, line a jelly roll pan with parchment. Roll the chilled dough out onto it into a 1/4 to 1/2-inch thick layer, leaving some space around the edge. Try to shape it into a nice, even rectangle. Next, bake the dough for 20-25 minutes.
- Shape the Crust: While not totally necessary, you can clean up the edges of your "American Flag" by using a butter knife to cut straight lines on all the edges while it is still warm.
- Make the Cream Cheese Frosting: Using an electric mixer, combine the cream cheese, butter, powdered sugar and vanilla. Mix these together until you have a smooth and creamy frosting. Then spread your frosting over the cooled cookie crust and chill again to firm up the frosting.
- Decorate With Fruit: Top with fruit! To make the flag design, add blueberries to the top left corner. Next, add sliced strawberries in horizontal rows to the rest of the crust, leaving gaps in between each row.
