These unicorn Rice Krispie treats are perfect for any unicorn party, but honestly, they’re great for any fun occasion!

Rice Krispie treats are one of those recipes I make on repeat, but every once in a while I like to dress up the classic for a party or a themed treat table.
These unicorn Rice Krispie treats are exactly that. They start with my regular recipe, but folding in pastel mini marshmallows at the end gives every square soft, colorful hunks of marshmallow running through it, and a scatter of sprinkles on top makes them feel extra festive without any special decorating skills required.
If you have a unicorn birthday party coming up, or just want a fun spin on a classic treat, this one comes together in about 15 minutes.
Why This Recipe is Awesome
The trick to getting that unicorn look is timing. Most rice krispie treat recipes melt all the marshmallows together, which means any color would just blend into the mixture. Here, the pastel marshmallows go in last, off the heat, so they soften just enough to stick without fully melting. That’s what gives you those pretty bites of color throughout the treats instead of a uniform pastel blur.
Ingredients

- 10 cups Rice Krispies cereal
- 20 ounces miniature marshmallows
- 1/2 cup salted butter
- 1 teaspoons vanilla extract
- 2 cups of pastel colored mini marshmallows, for folding in
- Sprinkles, for topping
How to Make Unicorn Rice Krispie Treats
Prepare a 9 X 13 pan by buttering the pan.

Melt the butter in a large pot over low heat. Add the miniature marshmallows and salt, and stir constantly until fully melted and smooth. Remove the pot from the heat and stir in the vanilla extract.

Add the Rice Krispies cereal and fold gently until every piece is coated in marshmallow.
While the mixture is still warm but off the heat, fold in the pastel colored mini marshmallows. Go easy here. You want to distribute them through the mixture without letting them fully melt, so you end up with soft, colorful hunks of marshmallow in the finished treats.

Transfer the mixture to a greased 9×13 pan. Press it in evenly with a greased spatula or a piece of wax paper, using a gentle hand so the treats stay soft.
While the treats are still warm and slightly tacky, scatter sprinkles over the top and press lightly so they stick.

Let the treats cool completely before cutting into squares.

Unicorn Rice Krispie Treats
Ingredients
- 10 cups Rice Krispie cereal
- 20 ounces White miniature marshmallows
- 2 cups Pastel miniature marshmallows
- 1/2 cup Salted butter
- 1 tsp Vanilla extract
- Sprinkles
Instructions
- Butter the inside of a 9X13 baking dish
- In a large stock pot, melt butter, over low heat.
- Once butter is almost melted, add all of the white marshmallows. Stirring often until almost melted
- Remove from heat and add vanilla. Stir well.
- Add pastel marshmallows. Stir to distribute.
- Add rice cereal and fold in gently until all the rice cereal is coated with marshmallow.
- Spread gently in buttered pan, using a greased spatula. Don't press to hard.
- Sprinkle sprinkles generously.
Tips for the Best Unicorn Rice Krispie Treats
Fold in the pastel marshmallows right before adding the rice cereal since you want those pastel marshmallow hunks to hold their color and shape.
Press the mixture into the pan gently rather than packing it down hard. Overpacking is the most common reason rice krispie treats turn out dense or hard instead of soft and chewy.
Add the sprinkles while the treats are still warm and slightly sticky. If they’ve cooled too much, the sprinkles won’t adhere as well.
Storing Unicorn Rice Krispie Treats
Store the treats in an airtight container at room temperature for up to 3 days. Keep them in a single layer or separate layers with wax paper so the sprinkles and marshmallow bites don’t stick together.
